The Étang de Thau Museum A journey into the heart of shellfish farming

Begin your exploration of the Thau Archipelago with a cultural immersion at the Étang de ThauEthnographic Museum. Opened in 1991, this vibrant museum brings to life the century-old history of the lagoon, its inhabitants and their traditions.

As soon as you enter, you will be greeted on the forecourt by a monumental work by Richard Di Rosa, a poetic sculpture forming part of the Balades Artistiques en Méditerranée (BAM). This installation sets the tone: here, art and heritage engage in a dialogue that explores our relationship with the environment.

Inside, the exhibition reveals 100 years of shellfish farming history. You will discover how Antoine Louis Tudesq revolutionised Mediterranean oyster farming in 1925 with his famous ‘Pyramid’ technique, how the Romans were already harvesting oysters from the Thau in ancient times, and the fascinating evolution of methods right up to modern rope-suspension farming techniques.

The aquariums showcase some of the lagoon’s biodiversity: seahorses, eels, sea bream… A feast for the eyes! A reconstruction of a 1950s shellfish farm immerses visitors in the atmosphere of the era, whilst the “fisherman’s shop” displays traditional tools that bear witness to local expertise.

Stroll through the picturesque alleyways A journey through time

The historic centre of Bouzigues offers a quintessential experience. With its fishermen’s houses featuring white or colourful façades, and its narrow, winding streets lined with flowers, the village has retained its authentic charm, which immediately captivates visitors.

Take the time to wander through the village, where every corner reveals an architectural detail, an ancient fountain or a small shaded square. The peaceful atmosphere invites you to contemplate and discover the traces of the village’s maritime past.

Don’t miss the town hall square and the old houses that tell the story of this community of oyster farmers and fishermen. The façades, sometimes adorned with shells, are a reminder of the activity that has been the lifeblood of Bouzigues for over a century.

For cycling enthusiasts, note that the cycle path that circles the Étang de Thau passes through Bouzigues, linking the village to Balaruc-le-Vieux and Mèze. This greenway allows you to explore the entire area in a gentle and eco-friendly way, whilst enjoying exceptional views of the lagoon.

Oyster tastings at the producers’ premises Bouzigues’ signature experience

You simply can’t visit the Thau Archipelago without trying the famousBouzigues oysters!

These exceptional shellfish benefit from a unique terroir and expertise: grown on ropes suspended in the rich waters of the lagoon, they thrive in an ecosystem where fresh and salt water mix. The absence of tides in the Mediterranean has led to the development of specific farming techniques: the oysters are attached in groups of three to ropes and then suspended from tables submerged in the lagoon. Some oyster farmers artificially recreate the tides, a process known as ‘exondation’. This involves removing the oysters from the water for several hours to produce denser flesh and a harder shell.

The result? Generous, meaty flesh, a very regular concave shape, and above all a distinctive flavour with slightly briny, nutty notes that have won over the greatest chefs, from Gilles Goujon to Anne-Sophie Pic. Their rapid growth and excellent value for money make them the stars of Mediterranean cuisine.

Head straight to one of the local oyster farmers for an authentic tasting by the water’s edge. Many shellfish farms open their doors to let you discover the secrets of their craft: attaching spat, rearing oysters on submerged racks, shucking…

The oyster farmers can prepare lovely platters of fresh shellfish for you to take away and enjoy by the water’s edge or on your terrace.

The Bouzigues oyster takes centre stage at festive events. The Estivales de Thau, held every summer, bring visitors together around tasting stalls offering wine, oysters, mussels and local produce in a friendly atmosphere. Taking place in a rotating schedule across all the towns of the Thau Archipelago, these Estivales also offer the chance to discover a wide range of producers and landscapes. Contrary to popular belief, Bouzigues oysters are enjoyed even in summer!

The port of Bouzigues The beating heart of the village, blending tradition and modernity

The port of Bouzigues embodies the very soul of the village. Stroll along the quays, where traditional boats, lateen-sailed vessels and oyster-farming boats mingle in a colourful spectacle.

In the background lie the 2,500 shellfish beds stretching across the lagoon, veritable“fields of the sea” where oysters and mussels grow. The panorama is enhanced by the silhouette of Mont Saint-Clair in Sète, which rises majestically in the background.

The port is also the ideal starting point for exploring the lagoon in a different way. Embark on a guided boat trip through the oyster beds. Immerse yourself in the world ofthe “farmers of the sea” and uncover the secrets of Mediterranean shellfish farming.

For water sports enthusiasts, the Bouzigues Yacht Club offers wing foiling, windsurfing, stand-up paddleboarding, catamaran sailing and canoeing. Gliding across the waters of the lagoon offers a unique perspective on the villages of the Thau Archipelago and the oyster beds.

Beaches and relaxation A relaxing break by the lagoon

The small beaches of Bouzigues offer an idyllic setting for a swim. Bordering the Thau lagoon, these unspoilt, peaceful spots are particularly popular with families thanks to their shallow, calm and crystal-clear waters.

La Pyramide beach, located behind the museum, is a little paradise for children, who can observe the lagoon’s wildlife in safe waters. La Trémie beach, at the western entrance, offers facilities and a warm, family-friendly atmosphere. Some beaches are even accessible to people with reduced mobility, reflecting Bouzigues’ commitment to inclusivity.

Tip from the locals: bring water shoes for extra comfort, and settle in at the end of the afternoon when the golden light bathes the lagoon and the surrounding hills in a magical glow. It’s the perfect time for a gourmet picnic with oysters bought just before from a local producer!

Bouzigues Farm Zoo A family getaway in the countryside

For a family day out inthe Thau Archipelago, head to the Bouzigues Zoo Farm.

The visitor trail, set in the heart of a wooded park, allows children to interact directly with the animals by feeding them, creating unforgettable moments of bonding with their “feathered and horned friends”.

A large, shaded picnic area awaits you for a cosy family get-together.

Getting to and around Bouzigues

Getting to Bouzigues and exploring the Thau Archipelago is a breeze thanks to the wide range of transport options available. 

The cycle path around the Thau lagoon allows you to cycle to Bouzigues from Mèze, Marseillan or Balaruc-les-Bains whilst enjoying exceptional views. Sète Agglopôle offers a long-term hire service for electric bikes for residents and visitors aged 16 and over.

Sète Agglopôle Mobilité operates routes 20 and 23, which run to Bouzigues from Sète, Mèze and Villeveyrac every day. Check the timetables at mobilite.agglopole.fr.

The Lio Hérault Transport network provides regular services on route 603/604 between Montpellier and Béziers via Bouzigues (La Clavade stop, departures every 3 hours from Monday to Saturday). More information here.

  • From Montpellier (29 km, 25 mins), take the A9 then the D613. From Sète (7 km, 15 mins) or Mèze (5 km, 10 mins), follow the D613 which runs alongside the lagoon.
