The must-sees in Bouzigues

Some villages tell their story through words. Bouzigues tells its story through flavours, scents and images: the pearlescent shell of an oyster opening, the ropes plunging into the lagoon’s waters, the sun glinting off the harbour’s rooftops. You come here to taste the local specialities, and you leave after strolling through its flower-filled narrow streets, visiting the Étang de Thau museum, meeting an oyster farmer to explore his oyster beds from the inside, and sitting down for a meal that lasts far longer than planned, overlooking the Étang de Thau. The history of Bouzigues

First mentioned in the 4th century under the name Bosygium, meaning ‘fallow land’, the village long made a modest living from fishing and wine-growing, drawing its livelihood from the unassuming riches of the lagoon. Excavations at the Gallo-Roman villa in Loupian have confirmed that oysters were farmed as far back as antiquity and traded to Rome, proof that these bountiful waters sustained people long before Bouzigues became the cradle of shellfish farming.

For it was here, in 1925, that a local bricklayer named Louis Tudesq changed the fate of the lagoon forever. Together with other locals, he developed the first oyster farming technique, known as the ‘Pyramid’, making Bouzigues the cradle of shellfish production in the Thau basin. A simple, ingenious invention that quickly spread around the entire lagoon and transformed this small fishing village into a gastronomic benchmark recognised far beyond the borders of the Hérault. Today, 450 passionate oyster farmers carry on this centuries-old expertise in a preserved environment, and Bouzigues continues to write, plate by plate, a story that is every bit a wonderful human adventure.

In the oyster farms, the oyster farmers reveal the secrets of their suspended rope-farming method, a technique unique to the Mediterranean that originated right here at the start of the 20th century. With a platter of oysters, a glass of Picpoul de Pinet, and a view of the oyster beds and Mont Saint-Clair as a backdrop, tasting takes on a whole new dimension here. And to take it a step further, the Étang de Thau Museum traces the entire history of shellfish farming in the lagoon, from the first fishermen to today’s techniques.
