Today, I’m treating myself to a shellfish tasting, overlooking the Thau Lagoon at a shellfish farm.

Let’s be honest… If I’ve come to spend my holidays in the Thau Archipelago, it’s not just to laze in the sun! An epicurean at heart, I’m keen above all to sample all the local specialities, particularly the famous shellfish from the Thau lagoon.

No time to waste! I’m heading for the north of the lagoon, between Bouzigues and Loupian, where producers offer tastings at their production sites, the shellfish farms.

Once there, I’m immediately in the mood. The goals: pleasure and relaxation. And the setting lends itself to this perfectly. I take a seat at a table on a wooden terrace, facing the deep blue of the lagoon, with an extraordinary view of the oyster beds and Sète in the background. I feel as though my holiday is finally beginning!

Warmly welcomed by a producer with a lilting accent, I take a look at the menu: fresh or gratinated oysters, and mussel brasucade. And to accompany it all, I opt for a local white wine, on the advice of my host.

Discovering shellfish farming in the Thau Lagoon

Now that I’ve finished my meal, I’d like to find out more about how these shellfish are produced and about the history of the lagoon. I’ve heard my neighbours at the next table chatting about their visit to the Bouzigues Lagoon Museum, which is only a few kilometres away. A break in the cool air won’t do me any harm!

Once there, I’m not disappointed by what I see. The museum displays objects and tools used for fishing and shellfish farming, and brings the history of the lagoon to life in a very engaging way. A very informative visit! Now, I have just one desire: to set off and explore the oyster beds and the lagoon by boat!
